Bengan ka raita is very good recipe to serve with pulao or biryani or just boiled rice.

Ingredients:

  • 4 Brinjal
  • 1 cup Fresh Milk
  • 3 cups Yogurt  
  • 1 tsp Sugar
  • 1 tbsp Corn Flour
  • 1 tbsp Red Chilies
  • 1 tbsp Ginger Garlic Paste
  • Salt  to taste
  • Ingredients for bhagar:
  • 1 cup Oil
  • 6 Whole Red Chilies
  • Curry leaves few
  • 4-5 Dry Fenugreek Leaves
  • 1 tsp Cumin

Preparation Method:
Beat yogurt,corn flour,sugar and fresh milk and mix it properly.
Now put brinjals in a pan and deep fry them in heated oil and make them golden brown and then spread them.
Now take a pan and heat ½ cup oil and add ginger garlic paste,red chilies and salt to taste and cook it and add the fried bringals in it.
In a dish add yogurt and then a layer of masala mixed brinjals and then again a layer of yogurt.
In the end, heat oil and add cumin,  whole red chilies, few curry leaves and dry fenugreek leaves and fry them and prepare the bhagar and put it on the raita.
